SALVAJE

Estaca Bacanora Salvaje, Sonora, Mexico $110


Produced from wild agave, this expression offers a perfume with a smoky, ethereal veil. Its smoke is a character actor with charismatic stage presence. Minerality is traced through a vegetal complexity, with orange blossom, Bergamot, and white pepper. Honeyed agave enters mid-palate with echoes of clove and rose petals. 96 points - THE TASTING PANEL

The Valiant

VALIENTE

Estaca Bacanora Valiente Reposado, Sonora, Mexico, $120


Aged nine months in Bourbon barrels, aromas of peach pie, wildflowers, agave, and cinnamon rise out of the glass. An incredibly gentle entry, with soft peach, MacIntosh apple, vanilla, seasoned with white pepper. Exquisitely balanced finish of sandalwood, spice, and orchard fruit. 97 points - THE TASTING PANEL

The Courageous

Estaca Bacanora Coraje, Sonora, Mexico, $110

​

Coraje is a still-strength Blanco. The 50% alcohol by volume is surprisingly well integrated and does not come off as harsh or hot. It has hints of cooked agave and brown sugar. Earthy notes stand out, with a long and lingering finish.

The Rebel

ESTACA
EL TRAGO

Estaca Bacanora El Trago, Sonora, Mexico, $140

​

El Trago is a still-strength Blanco produced from wild agave. Made exactly like in the days when it was illegal- that is, put in glass demijohns (5 gallon bottles) directly from the still and then buried to hide it from the authorities! The resulting elixir that spent 1 year underground, is bright and very viscous with aromas of cooked agave and dried herbs.
